Leftover Update

We'd somehow managed to eat all of the lettuce from Wednesday's Greek Salad, so I mixed in the leftover items (with dressing) into my black beans and rice the next day and oh my dear god was it good.

When making the next round of BB&R I included some savory. That was also a good call.

Black Beans & Rice

1 can of cheap-o black beans (drained but not rinsed)
1/4 cup chopped onion
1 tsp garlic powder (fresh garlic doesn't cook down enough)
1 tsp salt
1 tsp pepper
1 tsp savory

2 cups cooked rice (instant's fine)
1/2 cup cheese (cheddar's yummy, but anything will do)
1/4 cup sour cream


Saute black beans onion and spices for 'bout 8 minutes. Serve over rice. Melt cheese on top. Dress with sour cream if so desired.

(Leftover option: Toss in leftover veggies . . . green peppers and red onions are ideal.)

Wednesday Night Awesomeness -- Oh Yeah.

Whether it be Lost, Alias, Buffy, or none at all, TV and food on Wednesdays are the perfect marriage in a perfect universe. That universe centers on me (AKA all of us) sitting on the couch and eating.

This week there was no Lost. Nor Alias. Nor Buffy. But there WAS cilantro ravioli with pumpkin filling, roasted fennel with parmesan (be sure to remove the top layer of the bulb), and Greek salad (with tomato, red onion, green olives, cucumber, feta, and a very very vinegar-y dressing). And Easter Pie. Which is awesome. More than words can say.

To drink, there was too much wine. There was Cavit Pino Grigio (a remarkable little $6 bottle of wine) with uncooked ravioli filling at Christine's. She didn't share. Then there was a nondescript California red table that was shown vastly inferior to the Spanish red table wine (Borsao) that made us very sleepy and nostalgic and Christine hung over.

Adam was making eggs. Loser.
